Why we press our own tortillas
At the heart of Masa are freshly pressed corn tortillas, made every day with 100% Mexican masa harina. They are the reason the rest of the plate works, so they are the one thing we will always make ourselves.
Masa harina is corn flour made the Mexican way: dried corn is cooked and steeped in limewater, a process called nixtamalisation, then ground and dried. Mixed with water it becomes masa, the dough of every true Mexican tortilla. Skip that step and you have a wrap; keep it and you get a tortilla that holds together and tastes of toasted corn.
It also makes our tortillas gluten-free, every one of them. And if you're vegan, tell us and we'll swap our vegan cheese for the queso fresco, so the tortilla is the same for everyone.
Try one taco, or order a triple of the same: the chillies on the menu show the heat. ¡Ándale pues!
